I've been watching Food Network for the past couple of days and EVERY show seems to have something to do with hot wings! So watching all of this, I went to the store and made my own hotwings.

I started with about 3 1/2lbs of chicken wings and soaked them in a concoction of buttermilk, Texas Pete hotsauce, and a little bit of cayanne pepper. I just do it by eyeball, no particular amounts of each ingredient, but 3 parts buttermilk to 1 part hot sauce works really well. And I just make enough to completely cover the wings. Then you just let them sit in the stuff until they soak it up like a sponge! Once the liquid has performed this disappearing act, you can move on to act II.

This includes the "crust" if you will, consisting of the wet and the dry. The wet includes beat eggs (again, enough to do the job), lemon juice, and a squirt or two of worchestershire sauce. The dry includes flour, little bit of cornstarch, lots of Lawry's seasoned salt, little bit of Lawry's garlic salt, cayenne pepper, and a touch of brown sugar. You coat the wings in the wet ingredients, then dreadge them in the flower mixture, but don't cook them yet!!! Let them bond with the coating, that way it doesn't fall off while cooking.

Which brings me to the topic of how to prepare these bad boys. I like to fry them, but you can bake them if you want.

Now at this point, I'll usually just dust the finished wings with Lawry's seasoned salt, malt vinegar, and start stuffing my face, but some folks like 'em wet! Well, I can tell you an easy way to make a traditional style wing sauce as well as a honey BBQ sauce.

Traditional- Just heat up a bunch of hot sauce in a sauce pan, then melt in butter! Simple as that

Honey BBQ- This one's a little more complicated, but definately worth the extra effort and time. You start with ketchup, a little yellow mustard (or brown if you want a little more kick), a sprinkle of tumeric, a touch of cilatro, HONEY obviously, brown sugar, and COFFEE!! Thats right, coffee. You can eaither use fresh brewed or powdered instant. You bring all the ingredients to a simmer and voila!

Hopefully my little concoction will show up at someone's super bowl party, but likewise, I'd like to see some of yours! Please feel free to share your wing ideas!

That sounds good and simple to prepare at the same time.
I soak chicken overnight in buttermilk before frying as well. My kids call it KFC, Kenny's Fried Chicken.

When I make wings normaly I soak them overnight covered in cheap hot sauce. When they are ready to grill I sprinkle one side with Cayenne pepper and the other side with Montreal Chicken Seasoning.
I grill them out side until they are crispy and the majority of the fat is cooked off and then they get put into a non-covered baking dish with BBQ sauce and hit the oven for about an hour at 200 degrees. This makes the outside crispy and the meat falls off of the bone.

It is simply an excuse for me to stand at the grill and drink a beer! Plus it is a bit healthier letting most of the nasty stuff burn off the wings.

However I do plan on using your method as well. That sounds good using the buttermilk marinade. thumb.gif
