Frittata

Heat oven to 350

Decide on the vegetable you want to use and prepare it. Leftover cabbage, asparagas or cooked green pepper make for some of my favorites. Slice 1/2 onion thinly and set aside.

crack five eggs and add 3 tbs milk, salt and pepper and whip

heat oven safe skillet over medium heat and add a pat of butter and some olive oil

cook onions for a few minutes until they wilt, then add the other vegetable.
continue cooking until well done


Lower heat on stove to low and add whipped egg mixture

Once bottom has firmed, you can put this in the oven to finish it off.

Top with a bit of Asiago as soon as it comes out of the oven.

this should be very thin. they taste better thinner than the restaurant versions that are made light and puffy.
serve with french bread either hot or cold. taste a corner to see if you need to add some salt at the end.
