I need to gain about 15 pounds. Here's my limitations though- no meat, low fat, low salt, diet restricted even more from Coumadin. Protein powders either contain vitamin K or don't list it, and I won't take the chance.
I've been eating frozen yogurt, pizza, pasta, etc, but it's hard to gain weight without junk food. Who'd a thunk it.
Steak, potatoes, beans, red wine, and beer have always helped me gain weight.
If you do not like steak, then I recommend bacon or deer roast.

Pizza is the wrong thing to eat if you want low fat and low salt.
Pasta with olive oil and garlic.
Pasta dishes heavy in olive oil. salads with an olive oil dressing along with higher fat foods like avocado

G we don't eat meat or chicken either. You can go with a ton of pasta and bread, spicy cheese, refried beans. There is quite a bit you can do to gain weight without meat. If you want I can get you some more info from my wife who is a vegitarian for 35 years and quite the cook. She knows her food really well.

Cheese, which I love, is , limited because of the fat content. I've been eating beans, of course. Vegetarian refired beans are not real high in calories. If you have a favorite veggie dish, send it along!

Twenty years ago, I started learning about food. At the time I wanted to be a chef, but things changed. However, my grandfather had several massive heart attacks and I learned how to cook for him. He had the same restrictions as you, he just wasn't a lawn eater like you.
You may want to add free range chicken or turkey to your diet as a temporary thing. I know you do not do meat, but it is the best way to gain weight.
I'll go off this chart and adjust the recipes for your needs as a grass eater.

from the chart I gathered that Mushroom, iceberg lettuce, cauliflower, eggplant, avocado, tomato, potato, green peppers, cucumber, corn, parsnips, beets, squash and onions are all good

I was always naturally thin. Then after getting too thin due to a medical condition, I was told a good 15-20 lbs overweight was a good idea. I sometimes have to go a week without any food.
What I learned about this is what we basically do is change our metabolism, basically Krebs cycle, which not only changes how we process certain foods like starches or fats but how it converts it to energy. Adding and losing weight, my metabolism became like a roller coaster constantly needing for me to adjust diet and exercise. For example, I'm too heavy right now by about 10-15 lbs. Instead of drastic measure like dieting hard, I've learned slowly is better because it limits the roller coaster.
