Transparent Pie - Any Interest in this Recipe from Kentucky?, Recipe added

I have the recipe for Transparent Pie from my sister's mother-in-law, an excellent cook and baker. This particular pie recipe comes from the area around Fleming, Mason and possibly some of the surrounding counties in Kentucky, and maybe southern Ohio. It is my favorite pie, and I think it deserves wide dissemination. It is similar to Chess Pie and Custard Pies, but it is slightly different in ingredients and amounts, that to me makes it taste better than both of those. If anyone is interested, I'll PM one of the staff to post in the recipes.

I'm from Western KY but transparent pies aren't that common there. Northern KY...Maysville area, they are huge. George Clooney is from around there and he has them sent to his movie sets. To me it's a cross between a pecan pie with no pecans and a chess pie.

Here's the recipe, courtesy of 9x19. It looks great1

Here's the recipe for Transparent Pie.

Filling:
2 cups sugar
1/2 cup butter
4 whole eggs
1 teaspoon vanilla
1 level tablespoon flour
1 tablespoon lemon juice

Cream sugar, butter and flour. Add eggs to the mixture and blend. Then add the remainder of the ingredients and blend.

Pastry:
1 cup flour
1/2 cup shortening
less than 1/4 cup water

Roll dough paper thin and shape in the pan. A good quality store bought pie shell can be used as well.

Add filling and bake at 350 degrees F until golden brown. When it is done, a knife should come out clean when inserted in the middle of the pie.

It was realy good, there was none left over for Sunday morning! thumb.gif The lemon juice is a nice touch.

A mock apple pie is made with ritz crackers instead of apples, you cannot hardly tell the difference. I will post the recipe if you want it.
