If you are soup fan try this one... it is mostly a root vegatable soup with some meatballs... i got this one from this month's Sunset Magazine... made it last night and DAMN it was good...
1 small peeled and seeded butternut squash (i omitted this as i dislike squash)
3 medium Yuokn Gold, potatoes (peeled... i left the skin on)
2 each large carrots and parsnips (again i left the parsnips out)
15-20 garlic cloves (i used 6

)
1/4 cup olive oil
2 1/2 tsp kosher salt
1 1/2 tsp freshly ground pepper divided in 1/2
1 lb freshly ground turkey (not breast only)... also i used turkey meatballs from the deli so i omitted this step as well...
1 tbsp fennel seeds
2 large leeks, cut into 1/4 in slices and rinsed
1 large head of fennel, cut into 1/4 inch slices and rinsed
8 cups of chicken broth reduced sodium
1. preheat oven to 425 degrees and arrange racks in upper/lower thirds of oven. with the cut squash, potatoes, carrots and parsnips spread them out in a large oiled roasting pan and toss them to coat with oil and then season with salt and pepper. spread them out in the pan so they aren't all bunched up and touching. roast them for about 40 minutes and turn half way though...
2. make the meatballs if you need to or use the premade deli/bagged brand...
3. roast meaballs for about the remainder of the time... about 25 minutes and turn them to brown all over...
4. in a large pot on the stovetop heat the remaining oil and add leeks, fennel, salt and pepper... cook until somewhat soft adn add in broth. bring to a boil over high heat cover and then simmer on low for 20-25 minutes.
5. check the vegatables in the oven when they are brown or carmelized, remove from oven along with meatballs. place the meatballs in the roasing pan and then pout a ladle full of the soup in the roasting pan to dissolve the brown goodness that has baked onto the pan and scrape the pan to get all that good stuff mixed with the soup. pour the soup from the pot into the roasting pan and place back into the oven for 5-10 minutes to let the let everything blend together.
6. remove from oven and let stand for a few minutes...
7. serve with bread and some freshly grated parmesan cheese.... yummy...
