Italian potato pancakes

dago potato pancakes

usefull if you have some leftover mashed spuds. just make sure the spuds are cold or they will stick to the pan.

in a bowl, combine the whipped potatoes, 1/4 cup of romano, 2 or three cloves of garlic(pressed),1 egg whipped in a quarter to a half cup of milk depending on your amount of mashed spuds. mix in 1/2 tsp of dried parsley and mix well.
heat a pan with a good amount of oil and drop in a few patties at a time. brown on both sides and keep adding oil between batches if needed.
