Good recipe for Chilli

What do you recommend? I want it very meaty with just a few beans.

1lb ground round or favorite meat brown in a pot
chopped onion cook while you brown the meat
Add some chili powder during this stage but not too much
Salt and pepper
Add your specialty vegitable if any (not necessary but adds character) such as bell peppers.

After browinging the meat and the onions are soft, add two to three small cans of tomato paste, one regular can of kidney beans , then add water to the texture you desire.

Now comes the important part. Let it simmer and taste. Add more chili powder, salt, pepper, to adjust the taste or a dash of other spices to your likeing. A dash of red pepper makes it hot and a dash of garlic powder gives it a slight Italian flair. Remember add spices slowly and continually taste until you get it where you want it.

Allow to simmer a long time, the longer the better the taste. Keep in mind in the spice phase that the longer you simmer the spices become a tad stronger.

That's basic chili.

Cool. Thanks alot man. I cook alot, but never really cooked chilli as my wife doesnt like to eat it.

That is basically the same recipie I use TJ, I make it just a tad different every time though. It is that time of the year that I need to fire up a new batch. Thanks for the reminder.

here's my venison chili recipe

1lb venison burger
1 16oz can of light red kidney beans

There is a "2-Alarm Chilli" seasoning kit that I use. I use almost the same procedure as TJ. I do mine in a crock-pot and let it cook slow. The longer the better (and the more spicy).

That venison recipe sounds awesome! Looks like I need to track down one of my deer-hunter buddies and have a beer-for-food negotiation. cool.gif

I do know the crock pot chili cooked slow is better tasting as left overs. Eat a bowl that night, store it in the fridge then eat a bowl two days later.

3 lbs ground beef
1 medium onion

6-7 serrano or cayenne peppers
2-3 habanero peppers

1 28 oz can Hunts whole tomatos in tomato juice, juice and all
½ can beer

1 tsp Mexican oregano
2 Tbl cumin
1 Tbl kosher salt
2 tsp black pepper
1 tsp cayenne pepper powder
Brown meat. Sautee onions and garlic, add peppers and sautee little longer. Add everything into pot and cook over low heat for 3 hours.

I didn't faint, but I did get a little light headed. (The habaneros saved the day......we love those suckers).

My printer is going to run out of toner from printing all of these recipes, I am going to dehydrate from drooling and slobbering, and my wife and I may never sleep in the same room again after eating that much chilli. 1huh.gif

Men were the original cooks. Dunno why ancient man ever let woman into the kitchen, or around the fire pit.


I cook my chili slightly different every time, but basically it's browned meat of some sort (I've made beef, pork, turkey, and chicken chili) with onions, beans, chili powder, salt, pepper, garlic, I'll toss in some drained diced canned 'maters, and some tomato paste. I like my chili thick, I hate watery chili. Nalley makes a damn good canned chili. Not sure if you weirdos outside the PNW know what Nalley is. Damn good chili though, for the canned stuff. Better than Hormel definately.


Ohya, chili should be eaten one of two ways -

IN a bowl, with crackers and a pile of shredded cheddar cheese OR

as my pop likes it -- chili spooned over a bowl of white rice.

i made chili last night too banana.gif

and for the record, in my recepi, the brand of chili powder is McCormicks. its good stuff.

now i can't wait to cook up the tender loins on that little deer i killed saturday. i cut the t.l.'s into about 8 inch long strips and then butterflied them open.......mmmmmmm....they're gonna taste good on the grill this weekend.

make sure you use "HOT" instead of "Original". the spicier the better for me.
