Pretty quick and easy.
Take your cheese of choice (mozzerella works great for this) shred it and throw it in a large bowl. Add diced mushrooms, onion, garlic, anything else you want in the chicken and mix well.
Take chicken breast and make a pouch inside each one with a fillet knife. Stuff them as full of the cheese and veggies as you can without tearing the flesh. Set them all on a cookie sheet or in an over safe dish. Cover lightly with olive oil and herbs. bake in oven at 350-400 until almost done. Take the whole thing out and cover each breat with tomato paste and more cheese then place in oven again until cooked. Done
