Irish Quiche, or poor man's quiche

It isnt a conventional recipe since there are no set amounts (that I know of)

It is pretty simple... sliced potato and onion dumped into a pot wif some hot oil and butter... add spices as you wish (I usually go for pepercorn and garlic browned and cooked through only want the taters crispy on the outside not in...)

While that is cooking, beat together some eggs, add a little milk and flour along with pepper and salt or anything else you desire... then pour the egg mix in the potato... reduce heat right away and stir till almost done. pack it down, cover with cheese, and cover until cheese melts on low (turn power off for a clean top, it will cook a bit anyway)

Once cheese is melted, you can cut it in slices like quiche (or pizza for you macho "I don't eat quiche" men.... I deliberately did not put amounts down because they are all approximate... basically 4 medium potatos =4 to 6 eggs...but you have to decide what mix you like best....

It's actually kinda fun to make and never turns out the same twice...

What, no meat?

Sounds good, but I would have to add some kind of animal flesh to the recipe.

i have added lots of different meats to it... ham is great. this is one of those do wahtever ya want to with it recipies animlol.gif

That sounds like a very versatile recipe. We will definetely be trying out various versions of this. Thank you for the ideas!
